Clean Zucchini Bread
2 large eggs at room temperature
2 large ripened, mashed bananas
3 TB of pure maple syrup
1 TSP pure vanilla extract
1 cup shredded zucchini (about 1 medium zucchini)
2 TB of PB2, peanut butter or almond butter
2 TB of melted butter, coconut or avocado oil
3/4 almond, coconut or whole wheat flour
1 1/2 TSP ground cinnamon
1 TB pure cocoa
1/4 cup of chocolate chips of choice (vegan, carob chips, you choose)-You can either mix into ingredients or line on top, see image below.
Place rack in the center of your preheated oven at 350 degrees. Line bread pan with parchment paper, allowing some to hang over sides.
Blend wet ingredients in blender or hand mixer. Mix dry ingredients in large mixing bowls and pour blended wet ingredients into mixed dry ingredients. Mix dry and wet ingredients together.
Pour mixed ingredients into bread pan and place in preheated oven. Bake for 35-45 minutes, time ranges depending on individual oven.
Once timer goes off, check to see if bread is cooked thoroughly by checking with toothpick. If toothpick has “dough” it needs a little more time.
Let cool for 10-15 minutes then slice into bread like slices and enjoy!
