Crock Pot Clean Zuppa Toscana

I just tried this tonight and LOVED it!  Two things I LOVED was it was flavorful and healthy!


1 LB Uncured Nitrate Free Chicken, Turkey or Pork Sausage-cubed and cooked

4 Large cubed organic red potatoes

3 Kale leaves-ribbed and diced

1/2 Pint of Horizon Organic Half & Half

64 Ounces Homemade Vegetable Broth or store bought Free Range Chicken or Vegetable broth

1-2 TSP Crushed Red Peppers (optional)

1/2 cup Freshly Grated Parmesan or Romano Cheese to garnish

Cook sausage on medium heat until browned.  Once browned, turn on and let cool.  While sausage is cooling, wash and cut potatoes into cubes and place into crock pot.  Once sausage is cooled, cut into cubes and add to crock pot.  Add Kale to crock pot.  Pour 64 ounces of vegetable broth into crock pot and cook on low for 2 hours, then turn to high for 1 hour to soften potatoes just right.  During the last 15 minutes, add in half & half and stir.  Serve and garnish with red peppers and cheese to taste.  Enjoy!
