Pressure Cooker Albóndigas

Serves 8-10



1-1 1/2 lb ground meat of choice

1 cup cooked rice of choice

1/2 diced onion

3 minced garlic cloves

2 eggs

Salt and pepper to taste


4 cups of filtered water

1 bouillon cube or 1 TBSP better than bouillon of choice

2 diced tomatoes

2-3 diced carrots

2-3 diced celery, including leaves for extra flavor

1-2 diced zucchini

Salt and pepper to taste

Optional garnishments:

1 bunch of minced cilantro

2-3 sliced lemon

2 TBSP Crushed red pepper

Cooking Instructions:

Place 1 cup water, bouillon, tomatoes and carrots into pot on “sauté” setting. Stir and sauté until bouillon is dissolved.

While sautéing, mix meatball ingredients together, make 1″ meatballs and place into sautéing pot.

Place lid on and cook for 2 minutes on high. Once timer sounds off, release pressure. Add remainder 3 cups of water, celery and zucchini into pot and stir.

Place lid on and cook for additional 2 minutes on high. Once timer sounds off, pressure release, add salt and pepper to taste and serve!

Feel free to garnish with minced cilantro, lemon and/or chili pepper
