Pressure Cooker/Instant Pot Rice

I normally cook my rice in 2 cup increments, so here’s what I do:

2 cups of basmati, brown or wild rice (I use rice without enrichments)

3 cups of water (distilled or purified is recommended)

2TB of oil of choice (optional)

Pour ingredients into pot, place lid and make sure it is locked and pressure valve is on “pressure”.  Cook on high for 3 minutes.  Once timer goes off, move pressure valve to “pressure release” and allow pressure to release for 5-7 minutes.  This will allow the pressure to come out, but also the rice will finish cooking during that time.

Serve with meal and enjoy!  We enjoyed ours with veggies over rice.
