Pressure Cooker Mashed Potatoes
6-8 peeled and cubed potatoes of choice
2 cups of water, broth OR 2 TB butter of choice
2 TB of oil of choice (I used avocado oil)
3 minced garlic cloves
Salt and pepper to taste
Place above ingredients into pressure cooker and cook on high for 2 minutes. Once alarm sounds off, release pressure for about 3-5 minutes. Open lid and mash. Add 1/2-1 cup of water, if desired or needed.
