Spanish Rice-Instant Pot and Stove Top

Ingredients: 

1 cup basmati, jasmine or brown rice ( if using brown rice, it’s best if soaked in water for at least 1 hour prior to cooking then drained)

1 TB of High heat frying oil (I use Coconut oil)

1 C of homemade or canned tomato sauce

Salt and pepper to taste

For pressure cooker/Instant pot:

Cook rice and oil on the “browning” setting until rice is browned then stir in tomato sauce.  Add 1 1/4 C water and Cook on high for 3 minutes, pressure release and leave for 3-5 minutes before serving.

For stove top:

Cook rice, 2 C of water with tomato sauce and oil on medium/high heat until water is gone, bring heat to low and put lid on for additional 10 minutes or until rice is soft.

I topped my rice over romaine and add fresh homemade salsa
