Tomatillo Sauce

3 LBS Tomatillos (they’re green and usually by the hot peppers)

1 Bunch of cut Cilantro

1/2 medium diced Onion

4-6 serrano chiles, if making it spicy or salsa

Salt and pepper to taste

Remove husk from tomatillos and rinse. Put tomatillos to boil in pot. Stir regularly. Once softened, remove and strain. Place strained items into blender. Add in cilantro, onions (and Serrano chiles) then blend together. Use lower speed for chunkier and higher for thinner sauce. Makes about 5 cups of sauce
