Veggie Broth Soup
Great for sickness, detox and just to get those much needed into the system
1 Veggie Bouillon cube or veggie broth of choice
8 peeled potatoes cut into 1/4 sizes
6 carrots cut into 1/4 lengthwise
2 zucchini cut into 1/4 lengthwise
Any other veggies of choice
1 TSP onion powder
1 TSP garlic powder
sea salt and pepper to taste
large stock pot
Optional to garnish:
Fresh squeeze lemon juice
Homemade salsa of choice
Fill stock pot half way with water and bring to boil. In the order from vegetable needing longer cooking to shortest, add in vegetables.
Once water is boiling, I lowered temp to medium and added in veggie boullion and potatoes, let cook for 10 minutes, added in carrots, let cook for additional 5 minutes then added in zucchini and let cook for another 5-10 minutes or desired softness.
Once veggies are cooked to desired softness, add in onion powder, garlic powder and salt/pepper to taste.
I garnished with some fresh squeeze lemon juice and homemade salsa!
