Veggie Pasta Casserole
A great way to add veggies into our lives without "tasting" them
I found sauces to be a great way to "hide" veggies like cauliflower, spinach, zucchini, carrot, sweet peppers.
Homemade Spaghetti Sauce Ingredients:
10 tomatoes
½ red bell pepper
½ yellow or orange bell
1 C Spinach
1 C Cauliflower
1 Carrot
1 Zucchini
1 onion
2 minced garlic cloves
basil and/or parsley
Salt and pepper to taste.
Cut all ingredients and place into crock pot. Cook on low for 4 hours, high for 2 hours or until all ingredients are soft. OR cook on low/medium on stove top for 2 hours. Blend until desired consistency. Use, refrigerate or freeze until ready to use.
Casserole Ingredients:
1 pound cooked pasta of choice
2 C Cooked veggies of choice
2 Cups grated cheese of choice
1 jar of pasta sauce of choice to mix with above 2 C homemade sauce, if preferred
Optional: 1 LB Cooked and cubed chicken
Preheat oven to 350 degrees F. Mix all ingredients together and pour into baking pan. Bake 15-20 minutes or until desired crispness.
